A Fishwife’s Favourite ...

 

She’s the wife of a fisherman who lives, breaths, eats and exists for the ocean ... He’ll arrive home with scaled, gutted, and prepared Hottentot ready for the baking and she’ll do what she does best to make sure when the ‘Hottie’ comes out of the oven her family is armed, with a fork each, ready to tuck in straight from the pan. The best part of this dish? The skin which holds all the flavours. Whatever you do, don’t share it with Kitty. Being The Fishwife of Greenfish fame she’s more than happy to share her recipe and enjoy a glass of chilled Kaalvoet Meisie with her Fisherman ...

The Fishwife’s Recipe
Whole Baked Black Bream

 

You’ll need:

  •  A whole, fresh fish which greenfish.co.za can deliver to your door.
  • 2 tbsp chopped parsley.
  • 1 tbsp chopped chives.
  • 1 tbsp minced garlic.
  • ½ tsp coarse salt.
  • ½ tsp crushed black pepper.
  • 1 tsp fish spice.
  • 3 tbsp olive oil.
  • ½ a lemon, sliced.

 How to?

    1. Combine the parsley, chives, salt, pepper, fish sauce and olive oil to make a marinade.
    2. Dry the fish on both sides and score diagonally, about 1cm deep.
    3. Run the marinade on both sides of the fish, working into the scored areas.
    4. Rub some of the remaining marinade into the fish’s gut and stuff with lemon.
    5. Place in a greased baking pan and bake for 20 minutes at 220 degrees Celsius.

    6. Remove and let the Hungry Games begin. Enjoy hot, eating straight from the pan.
